Most of these have to do with Canning Potatoes post. This post is the most read/looked up/searched for post on this blog. Which to me is a little funny as I have canned potatoes for 10 plus years. Now more and more people are canning more than just jellies and vegs.
Tanya: love your web site…I too am into canning and have gotten a friend of mine into it but she came across a problem that I have never had so wondering if you have…She canned potatoes and at least half of them the lid actually popped up..later when they cooled off they went back down but left wrinkles in the lid..do you think they are safe and has this ever happened to you…thanks for any help are suggestions///
Sometimes this happens to me too, at least one time a canning season. I think it’s the lids (weak). If the jars have sealed, they are still good. But I do use those with the wrinkled tops first. If they didn’t seal put in the icebox and use as soon as you can.

Yes, you can can potatoes with all you listed above. But I have found it easier here at our home to can them all by them selves, as you can do more with them not mixed. When I make Beef stew- in a pot put a jar of: potatoes, carrots, beef(meat), and any thing else you like in there, cook to warm up and eat. But if you want to mix them look in a canning book and see which takes the longest and can for that time for mixed things. This goes for all things you mix to can, use the longest time. Yvon: Becky, I just got a pressure canner and was very eager to try it. Mom has done her veggies all her life in a water bath but thought I would do the safer thing and get a pressure canner. I just tried to can to qts of potato for my first try. One didn’t seal so I thought I would taste them. I’m a potato lover and I have to say I have never tasted worse potatoes in my life. They almost had a burnt taste without being burnt or over cooked. What did I do wrong. I followed the Bernadin book. It’s early June and used old potatoes, could that be the problem? It is best to pressure can most vegs, some are safe to hot water bath, but not many. Old potatoes are your problem for sure. I have at times used store bought potatoes on sale but they must be hard still, with no eye growth. Most times I can the potatoes out of the garden, dig up one day and can them the next. Ok Lord, I get the hint. Katye you see, you and your husband are not the first to say that. My late husband being the first( 2 1/2 years ago.) and then other readers here. But that would be stepping out of my comfort zone. And second, I have not the faintest clue were to start, or how to put it in a book form. So for now you all get it free here. 🙂 But as this writing a book thing keeps come up all around me, I will look more into. But please pray for me in this area, that the Lord’s will be done, as this is why I started the blog here.
Tasha’s baby, Gabby, is now about 6 1/2 lbs as of today, and is due in under 3 weeks. We are ready and trying hard to wait on her. Tasha had an ultra sound today, the last one. Little Miss Gabby is head up and feet down. Please pray that she will turn the right way soon. Thank you for all your prayers for me and my family.
I’m doing good most days, more so than a month ago. Thank you Lord. I really miss my better half, a lot. And I’m learning to live again, one day at a time. I’m finding me. (Only moms and wives will understand this.) Some how we lose ourselves over the years. The girls are doing great. We are waiting for our blessing from above, Miss Gabby.
The farm is doing good. I have made bigger chicken pens. I need to make 2 more different pens. We are chicken sitting for about 8 weeks. Now that’s a true farm, chicken sitting (watching for a out of town friend). Really starting to miss the fresh cows milk. I have a few gallons in the freezer for when I get the withdraw shakes for fresh raw cow’s milk. 🙂 🙂
I have not found any new tips, hints, money savers lately. I only planted tomatoes and strawberries this year. Our food barn is full ( only 3 girls eating and no men, should last us way longer than a year), and it’s been a long time since I/we have enjoyed a summer, more than 10 years. So the girls and I are going to see what we can do besides hoe and weed all summer. I think Tommy knew this too, when he had me start stocking foods 3 years ago. But next year will be garden time again. This will be a easy summer for us because of Tommy’s insight.

I’m still kicking. But boy, oh boy is it cold here. It’s 6 degrees this morning. And I can stay in the warm house, as we no longer have the milk cow. So no more frozen fingers and noses. At 6 degrees outside, I’m really glad we sold the cow. Yesterday it did not get above 30 all day. I have seen where some of you are having it colder than me. And even some of you with lots of snow. Burrrrrr.
Tommy’s had good days and bad days. The pain comes and goes from his knees and chest. The morphine seems to help most times. Please keep praying for him.
The farm is still doing good. The chickens are still giving us a lot of eggs, which we are sharing. The beef bull is getting bigger. Hopefully by early summer he can go into the freezer.
My step-son told me about iPod Shuffle player, as I told him when I laid down to rest my mind kicked in on all I had to do. So I got one and downloaded books to it. It has made my rest time better. As hard as I try to stop my mind, well it’s hard to do. Am I worrying? I don’t think so, just going over everything that needs to be done. I have also loaded the iPod with parts of the Bible. And found out my library will allow you to download books free for a week at a time, off their Internet site, as long as you have a library card. They allow 5 books out at a time. They have adults and kids books, this find was a blessing. This is a money saver too. You might want to check with your library too, about this. As I know most kids and adults have some kind of iPod or MP3 players. You can also listen to to books from your computer or burn to Cd’s to play on CD players. I just found out about this last week. So I thought I share what I found out. TommieLynn loves it, as do I.
On another note: For those of you that can foods. Have you stocked up on canning lids? I try and keep about a year’s worth on hand. You never know when you will need them. They store forever, and you can usually buy them year round. Try and buy a pack or two every time you go to town, or when you can. You may not have money this summer to buy them, or power may go off for to long. You may not know when someone will bless you with meat and veg’s, at any time of year. It a small thing, these lids, but you can’t can without them. I ran out once during canning, a lesson learned well.
I have been keeping up with you all here, and glad you all are well. It seems to be a busy time for everyone. Trying to finds ways to save money, stretch what money you do have, looking for jobs, etc. Thank you all for the ideas and ways you have posted as they have helped me, too. This Internet is a blessing too. I have meet wonderful people, made new friends all over the world, got new ideas, and have learned so much.

Ok, you find a great sale on meat but don’t have room in your freezer; a friend is sharing their deer meat with you.
I have canned meat. Talk about a quick meal: open a jar of beef, potatoes, carrots, put in a pot and add some seasoning and you have beef stew. Open a jar of chicken and add noodles, a great soup.
This is raw packing meat( which means you don’t cook the meat first), beef, pork, chicken, deer, veal, mutton, lamb. Cut meat off the bones.(save meaty bones for canning broth below).
Cut the meat into jar length chucks or slice into 1″ slices, cube it like for beef stew.
Pack into jars loosely.
if desired add 1/2 teaspoon salt to pints, and 1 teaspoon to quarts.
pour in hot broth or water over the meat: leaving 1″ head space.
remove air bubbles, put lids on.
Pressure can at 10 pounds pressure:
Pints: 1 hour and 15 minutes
Quarts: 1 hour and 30 minutes
Canning Broths or Stock
Meaty beef bones or deer bones or chicken bones:
boil and simmer 2-3 hours, remove bones, skim off excess fat off the top, strain the liquid.
pour into jars, put lids on.
Pressure can at 10 pounds pressure:
pints: 20 minutes
quarts: 25 minutes
Or the broth can be frozen if you have the room.
Waste not,want not. I try to use everything. And after the meaty bones are done into a broth you can also can the meat off them, the bones go to the dogs and cats.
I have stayed busy. Tommy has had a bad week but thank God, I think he’s getting better. I have canned more potatoes, froze more milk and cream and eggs, and made a big batch of mozzarella cheese for the freezer. The mozzarella cheese photos and recipe, I will post in a few days.
I have 3 lbs. of onion sets that need to be planted. I could not get any this past spring. So hopefully they will have enough time to grow this fall. I have never grown onions in the fall, so this is my something new this year. We eat a lot of them. And two weeks ago at the store they were $2.?? for 3 lbs., used to be less than a dollar.
I am at the point were I hate, hate going to the store (any store). The prices on everything are up to unbelievable. Enough to make all sick. Thank God for my food barn, milk cow and chickens. I know a lot of you don’t have these things, and I am racking my brain on tips and hints for you. For right now, my tips are buy very wisely and learn to cook from scratch. I’ll be posting some easy from scratch recipes soon.
The chicken are slowly slowing down on their eggs. But I’m freezing a lot too. The milk cow is down to 3 gallons a day, and should keep going down now. We have a cow in the freezer. Chickens to kill this fall when it cools off more.
Winter is on the way. And I’m almost ready, or should I say as ready as I can get. This summer has flown by. There are leaves all over the ground here. At times, I would love to put a hold on the winter coming, Saying I need a little more time to get ready. But the good Lord knows what’s He’s going, so I pray I’m putting up enough for the winter. And if not, He’ll find a way to supply what we need, not want. I have felt like the ants in the Bible, more this year than ever before. And we have lived like this for years. Does anyone else feel like the ants this year?? I feel we all are in for the longest, hardest winter world wide.

The disability check didn’t go far this month and this month is not even half way over yet. Why? I’m not really sure. I have been trying to figure that out. And the only thing I can think of right off hand is more trips to doctors, GAS. No extra trips (fun,just to get out,etc.) to town. Ok,time to get more creative with what I have. We just trade one of our big trucks for a smaller stick shift truck, but will have to wait until next month to get it on the road. That will help a great deal on the gas. Our food supply is good, Thank you, Lord. We have a roof over our heads, power is on, clothes on our back, and we will make it through this month. God has never let us down, and He’s never left us. So why am I posting all of this? Well this is my life on the farm and in this world. Just maybe it’ll help someone else make it another month, or they’ll become more thankful for what they have. I know some of the blogs I read and keep up with, do that for me. I see that there are others out there like me or are in worse shape then me. I learn from others along the way and pray for those in need. Sometimes something in some one else’s blog- renews my strength and brightens my day, or just brings a needed smile to my face. So I am not sure what you, the reader, will get from this post, but I pray you are blessed in some way.
I have been canning more potatoes, and milk, freezing cream. It really needs to cool off some here so as I can make butter. It’s still in the 90’s at 5pm here. My freezer is almost full of cream. The garden is almost done for this year, I have two rows of potatoes left to dug up. But it’s been really hot and we do not have a cellar, and I wanted to have some uncanned potatoes for the winter. So I’ll leave them in the ground just a little longer.
Our friends had to move out of state to find work. So they blessed us with a new looking couch( Tommy lays here to take his breathing treatments, and our old one had him just about laying on the floor. We really needed a new one), a bunk bed set( twin on top and full on bottom. which I put in our other room, for when family comes), an outside glass top table with four chairs, a gliding rocker, and a few other things. All these things were a wonderful blessing. It felt like Christmas. Our friends will be greatly missed, but they said they’d be back. The Lord used them to bless us. He’s still watching out for us.
On to a brighter note: 387 + people in the last 30 days have looked at the Canning Potatoes post. That’s a blessing to me. I know here potatoes have went way, way up in price. So if you find them on sale, can some. If you canned potatoes for the first time, please let me know how it went for you.

You can use garden or store potatoes to can. Our potato plants died to soon, so we did not get the crop we usually get. So when potatoes go on sale, I will buy a bunch and can them.
These are our new potatoes dug this year. The small ones, I wash really good and can. These are good when it’s cold outside.
The above canned potatoes are from this year. The below are from last year. The starch (the white coating on potatoes below) is just washed off, and potatoes are good. The chopped potatoes are used in : beef stew, put in a pan and fried with butter and onions, in a pan and eaten as boiled potatoes, drained over night and used in potato salad, and more.
To pressure can Potatoes:
(are a low acid food and must be pressured canned to destroy all bacteria and etc.)
Small ones: just wash well and pack loosely in jars.
Large ones: Peel and cut into a brine water ( 1 teaspoon salt to a quart of water) , then rinse and pack loosely in to jars.
Then add 1 teaspoon of salt per quart and fill with water.
Process 40 minutes for quarts at 15 lbs.
For those of you who do not have a pressure canned, the potatoes can be froze, put in the cool part of your refrigerator. But please do not use a hot water bath canner as it is not safe.

Ok, I have check on what and how much I have stored this far. So I will know just what else I really need to store to go at least a year. This is only for canned foods I’ve canned, not store brought goods. This list and how many jars needed for a year is for 3 people and I figure for not being able to go to store at all , so my numbers are really a little high( so it might last more than a year). Some of this is from last year. But due to time and strength, I did not want to can more than we really used from the garden.
GREEN BEANS:(use 3 qts. a week) have 159 qts. ( might can more)
SWEET POTATOES: (only 1 person eats) have 25 pts.
POTATOES: ( use about 2 qts. a week) have 13 qts. ( need about 91 more qts.)
SHARP CHEEDAR CHEESE: have 6 pts. and 5 jelly jars ( want to can more, if they go on sale again)
CHEESE SAUCE: have 42 jelly jars ( want to can more, if they go on sale again) ( one jar makes mac and cheese for 4 people.)
MILK: ( use about 3 qts. a week) have 56 qts ( need about 100 qts. more)
CARROTS: have 30 qts. (only used it stew and soup, have enough)
TOMATOES: ( use about 1-2 qts. week) have 44 qts. ( will can more if tomatoes do good this year)
FRUITS(use about 2 qts. a week)
APPLE SAUCE: have 48 qts.
APPLE SLICES: have 27 qts.
PEAR CHUCKS: have 45 qts.
JELLIES AND BUTTERS: ( use about one pint a week)
APPLE BUTTER : have 9 pts.
APPLE JELLY: have 17 jelly jars
PEAR JAM: have 40 jelly jars
MIXED JELLIES: have 5 jelly jars
STRAWBERRY SYRUP: have 3 jelly jars
STRAWBERRY JAM: have 6 jelly jars and 2 pts. ( 7 gallon freezer bags in freezer to make more jam)
I am so thankful for all my stores. I know I have stated before that I was going to can every thing I could get my hands on, but well this was really stressing me out. I know how to garden and have seed for next year already, so why stress myself out? And all this will last us more than a year. And I’m slowly running out of shelf space in the food barn. I do not want 3 years of apples and no potatoes or green beans, ect.
Our beefalo (bull cow) is going in the freezer within the next 2-3 weeks. And 1 cow would last us a year with 5 people (2 adults, 2 teenagers, 1 child)eating. Now only 2 adults and one child, should last us much longer. We have about 26 young chicks that should be ready for the freezer by winter. If we need more, we’ll kill as needed. I can get 2-3 meals out of one chicken for us. We still have about 1 pig in freezer from last year, so we are good on meat.

We have a week of on and off rain. Which we so badly needed. The youth group came back. They mowed the yard, weed eatted around the yard, and moved just about all the mulch into the upper garden. They were a great blessing to us.
I went yesterday, and picks 2 big plastic totes of apples. I got them free, off the ground. The older man has a hard time picking from ground. He told me I could come any time and get all I wanted off the ground. Thank you Lord for the fruit. His trees are loaded. And so was the ground. As soon as I get these apples put up, I’ll go for more. I hope to make applesauce, can apples in a light syrup, and for the first time make apple jelly. We could not get apples from him last year due to a late frost, but did get some the year before. And I only have a few quarts left from that year.
If you all see an apple (pears,oranges,….) tree in someone’s yard, and there are apples on ground, stop and ask if you can have the ones on the ground. 9 times out of 10, them will just give them to you so as they do not have to pick them up or mow them. This is how I started, and now they call me when they are ready to pick up, year after year. Put the word out that you want peoples extras. After I have canned and froze all I need for the year, I call in people to come and pick the extra, and some people call me to come and get their extra ( things I don’t grow or have). Find out every one around you who farms or gardens, trade things with each other. More people are willing to trade than buy right now. I offer people a 1/3 to 1/2 on what I am doing for their help( snapping beans to can, peeling apples, peeling potatoes to can), just let people know. I have a list of people wanting to help. And Lord knows I need help. It is really time to start helping one another, and it blesses me so to see so many doing just that.
Well, yesterday I went to town ( I go every two weeks, now), and I could not believe the prices are still going up, even on my feed for the animals. And just in two weeks, some things with up as much as $1.00 per item. Boy, I really hate going to town. But I found a few good deals: Ivory soap 4 @$1.00 (was 3 @$1.00), cans of coffee $3.00 cheaper than anywhere else( I got 6, that’s all they had left),cereal for $1.89 a box( got 8), 2 baby changing pads $.25 each( for my homemade pads). This week there was not many sale for me, so not much to add to stock, but I got some. I got 700 pounds of feed for animals for two weeks, this bill was up by $30.00 . I wish I had enough room to grow my own feed, but I don’t, so I buy.
Well I have a lot of work I needed to do, pray you all have a great weekend.
I have been going full speed last few days. Right now it’s over 90, so I am taking a break in front of a fan. I am mulching everything I can, this so helps with less weeding, and holds water in longer. I canned more quarts of milk and quarts of green beans. Froze milk and eggs, and some cream(the only things you can not do with cream that has been frozen, is whip it. I make butter, ice cream and cheese with it as time allows). Thank you Lord, for a great garden and a milk cow who is giving more milk ( over 3 1/2 gallons a day, now)than I can keep what with, and 80+eggs to eat and eggs to put under hens( meat this winter). I hoed up another row of potatoes. One of our hens hatched 3 more chicks ( total so far this spring 11 chicks). I have got to find time (somewhere) to make strawberry jam, and I’m almost out of butter. The Lord has really blessed our farm and garden again. I am putting up everything I can get my hands on. Our daughter is bring in more blackberries than I can keep up with and finding them in places they were not in before. I know it’s going to be a very long, hard winter. And the Lord is providing food now to put up. Usually, when our garden and farm do above average, the winter coming has been hard and long. It has happened three different years, here. So that is why I am preparing more than I normally do, not just because of our economy and our income dropping to a third. This blog, Becky’s Farm Life , has gotten some many hits, from people looking to stock up on food and stretch their money, I know the Lord is trying to prepare them too. I am just trying to help all I can. It’s becoming my mission for the Lord. People, I talk to face to face think I’m crazy for telling them to stock up and get ready. So the Lord showed me to start this blog, and they will come, and they have. Please if any of you have ideas to add, please do so. As we are to help one another. And again, I don’t have all the answers, just telling what I know and what has worked here on our farm for years.
Tommy still has not gotten the gas line fixed under the house. So I am glad I have a gas stove top outside( this is where I can in the summer). In a way it’s a blessing, I can cook simpler meals,and the kitchen does not get so hot. Last night, we had eggs and bacon and toast and milk. I just have to keep an eye out for the cats, they think it’s their dinner. I am checking all my stored things as I go to the store next week. I have cut going to town to every two weeks, it would be once a month but I don’t have room to store that much animal feed. As it is I get 700 lbs, every two weeks, this feeds 3- cows, 30 chicken, 4- dogs, 4- cats, 6- kittens. Do you need a kitten? And many food we need for the next 2 weeks, I am so blessed to have a truck big enough to carry it all. When I come home from a day in town, the truck is packed tight. And usually takes us about 3 hrs. to get everything put up.
The milk cow has been giving me a hard time. She was in her worse heat the other night. She want to play with the bull more than she wanted to eat and get milked. It took me 3 1/2 hours to milk her out, usually 20 min’s. She a great milk cow for it being her first year milking. Tommy says, It’s a female thing, men think they know it all. I have another chicken wanting to sit on eggs, I will let her in a few days. I have strawberry runners to cut off, and sucker the tomatoes, clothes to wash and hang out side. Freezing eggs: You crack say 2- 3 eggs into a bowl, 1/4 tsp of sugar or salt(use sugar or salt-depending on what the eggs will be used for), just pop the yoke , and pour into a freezer bag. Label your bag sugar or salt. Check your most used recipes to find the number of eggs you use most. I use 6 eggs in ice cream- 6 eggs with 1/2 tsp sugar. Eggs to eat, I pack in 3 eggs with 1/4 tsp. salt. Eggs for cake mixes, add sugar to eggs. We have eaten the eggs I froze with sugar in them and they were good. The only thing you can’t do with these eggs, is have them fried. I have found they last 6-12 months. The older they get, its best to use them in recipes than to eat plain. A lot of people don’t know you can freeze eggs. After the first year here of home grown eggs, store bought didn’t look so good any more. So I found a way to keep us in eggs when the hens slowed down. This does work with store eggs ,too. Date your bags and use oldest first.
Freezing Milk: I have found that best way to freeze milk is to use juice bottles or 2 liter bottles, WHY? the jugs that milk comes in is very thin and weak. And more times than not, when the milk thaws the jug leaks. In a 2 liter bottle put a 1/2 gallon of milk, this will leave room for it to freeze. Always date your bottles. And it will thaw over night in ice box. I have found it will last 6- 12 months in freezer, I know that is not what is said, but that’s what works here. Just always use the oldest first. We have done this for over 6 years now, and same with eggs.
Canning Cheese and Milk and Butter: These are listed in the recipes tab at the top.
Canning hard cheeses: We love sharp cheddar cheese but don’t like it frozen. You can, can any hard cheese this way. So I found a way to can it. In jelly/ or pint jars, in a pan of water (put jars in water), put cheese in jars(slice into small pieces) , allow to melt down to 1 in. from top, then put lids on and hot water bath 40 min. for both pints and jelly jars.The longer it sit on shelf the sharp it gets. We just got plans to build a cheese press, so as I can make my own cheddar cheese. We have had to wait to make it because I had no way or place to allow cheese to ripen. So now I’ll make it and can it. The can cheese will last 2 plus years in a cool dark place.
